Don't worry Mike... Criterion has now finally embraced Blu-ray, and they will surely roll out the popular catalog titles soon (2009). Definitely those you mentioned above, plus I'd like to see -their- previous DVD editions brought to Blu-ray of:

SPARTACUS
TRAFFIC
DAYS OF HEAVEN
TIME BANDITS
...and many others.

It will be helpful to support the company (they are not a major studio you know), and purchase some of their titles this Christmas, either for yourself or a friend.

Forgive my ignorance but whats the difference between the regular DVD of Traffic and the Criterion version?

the regular version of Traffic is a one-disc DVD whereas the Criterion version is a 2 disc set. you know what is in the 2nd disc?
