I believe Paramount released "Star Trek" in 5.1 to theaters, didn't they? The theatrical soundtracks to almost all movies these days are in 5.1. For a 7.1 disc track, the studio either has to go back to the original sound elements and recreate a new soundtrack using two more rear channels, or the studio does what any 7.1 receiver also does and artificially simulates the two rear channels.
In any case, if you have your 7.1 receiver set for emulating rear channels (as Dolby Pro Logic II does), I doubt there would be too much difference. Yeah, it's always better for the studio to do it for us, one way or the other, and their putting the number "7.1" on the box also helps sell the product. But we'll see.
